The last couple of days I have been making an extra effort for healthy eating and healthy lifestyle choices. My meals have pretty much looked the same. Greek yogurt with bananas, blueberries and Kashi Go Lean Crunch cereal for breakfast:
Then to the gym for weight lifting and cardio.
Green smoothie to refuel:
Salad for lunch with Bolthouse Farms Yogurt Ranch dressing:
Today I took half of a pb and j to work for a snack. Then for dinner, pollo con crema:
My brother-in-law taught me this yummy recipe:
Pollo Con Crema:
- 2 chicken breasts sliced very thin
- one half of red, orange and green bell peppers, sliced very thin
- one jalapeno (seeds removed) sliced very thin
- one half habanero diced very very small
- one small onion sliced very thin
- one half tomato thinly sliced
- cayenne pepper
- chili powder
- 2-3 tablespoons sour cream
- Cacique queso fresco
- flour tortillas
Cook chicken in about 4 tablespoons canola oil on medium to med high heat until water is almost evaporated (it should not brown) stirring constantly, add peppers, cook for about 5 minutes, stirring constantly, add onions and tomatoes, and cook for about 5 minutes, stirring constantly, sprinkle with chili powder, cayenne, and salt to taste. I used about 1/2 teaspoon chili powder and 1/4 teaspoon cayenne, 1/4 teaspoon salt.
Turn off heat and add sour cream.
Heat tortillas in a dry pan until they get a few toasty brown spots. Do not skip this, it makes a big difference.
Serve pollo con crema on tortillas with a little queso fresco crumbled on top. Oh yum!
And since I’m working fewer hours these summer months, I have time to do some exp-hair-imenting. I have been wanting to try the sock bun ever since I saw a video how to do it.
First you cut the toes of a sock. Then you put your hair in a ponytail at whatever height you want your bun. The, put the sock over the ponytail, cut end up:
Then you sort of spread your hair around the sock opening and start rolling, rolling your hair into the sock:
Yes, that’s a cat tail.
Roll until you reach the bottom, and secure any fly aways with a bobby pin. Viola:
It was so easy to do and made the best fullest bun I have ever had. Can you think of any other fun hair ideas I can try?
