Happy Monday. It was off to a good start with a small bite to eat before a three-mile run:
After my hot run, I cooled off with a yummy smoothie:
For this smoothie I used about a cup of spinach, half a frozen banana, 3 frozen strawberries, frozen mangoes, and frozen blueberries, flax seed, with a little apple juice. You can’t even taste the spinach, trust me. Try it!
It was a great day hanging out with my momma. We chilled in the hot tub for a while, and then went to the grocery store to pick up a couple of things for dinner.
Lunch was cold quinoa with butter beans, tomatoes, cucumbers, onions, garlic, parsley, lime juice and olive oil. Basically leftovers all mixed up into a cold salad.
Then later, mom and I whipped up a little snack of hummus with pita chips, and cantaloupe.
For dinner, we had a genius idea of using whole wheat naan bread for pizza crust and putting it on the grill. After a sacrificial burnt pizza, they turned out really good. The key is to heat the grill, then turn the flames off.
My pizza had tomatoes, mushrooms, banana peppers, artichoke hearts, basil, and mozzerella cheese. We also had a salad:
