Turkey Lentil Loaf

I attempted to make a healthy version of meat loaf, packed with veggies and greens. Result, pretty good, but the kale gave it just a tad bitter taste, I would use spinach next time. Into the mix:

-sautéed veggies (1 large onion, 1 cup shredded carrots (in the food processor), 2 handfuls of kale)
-1 cup cooked lentils
-1 lb lean ground turkey
-about 1/2 cup of bread crumbs, add more if too wet.
-1 egg
-McCormick meatloaf seasoning
-1/4 cup tomato sauce
Disclaimer: All measurements are approximate. I’m an eyeball cooker
Form into a loaf, top with tomato sauce and ketchup and bake at 350 for about 2 hours.

I actually made this a few days ago, but I polished it off for lunch today. And for dinner it was leftover sauerkraut and mashed potatoes. A day of leftovers! I have some great meals planned for this coming week, stayed tuned for those.
