The crazy wedding planner is at it again. This time planning an unusual marriage. Yesterday’s Homemade Chicken Tikka Masala gets cozy with today’s Easy Chicken Quesadilla. You all know that I hate to waste food. So after pulling out my leftovers and satisfying my Cinco de Mayo Mexican craving, I came up with an odd match of flavors that actually work together.
But before we can get to this Easy Chicken Quesadilla:
Here’s what you’ll need to create homemade chicken tikka masala:
-diced chicken breast
-Aurora Creations chicken tikka masala spice packet
The key here is the Aurora Creations chicken tikka masala spice mix. I order it online. It tastes amazing, but do yourself a favor and only use half the recommended amount of ginger. I used the whole amount and it was SPICY!
Just follow the directions on the packet and serve over whole wheat couscous and a side of peas. Or whatever veggie you like. Just remember to eat something green 🙂
The leftovers make the base for the Easy Chicken Quesadilla
You’ll also need fresh spinach, mushrooms, salsa, cheese, tomatoes, and avocado.
First sautee 4 oz of mushroons and 2 cups fresh spinach.
Then add some leftover Chicken Tikka Masala and some salsa. Heat through. On the George Foreman grill, put your favorite whole grain tortilla (don’t forget some cooking spray), then sprinkle on some cheese, then the Chicken Tikka Masala mixture. Then a little more cheese.
Then another tortilla. Close grill and cook for about 3-4 minutes.
In the meantime, chop some tomato and mix it with half an avocado, salt and pepper.
