Can I just say yipeeeeeeeee!!!! ? This morning was the perfect weather for an 8 mile run!! It feels like fall is starting to make its sloooow appearance here in Tampa. The run was awesome!! I felt great the whole time.
I’m not quite sure how it happened that I even had the motivation to roll out of bed and go after my whirlwind weekend, but it did and I am grateful.
This past weekend, we had 3 weddings at Cross Creek Ranch and sweet man’s mom and step dad were in town visiting, so we had some fun evenings together. Starting Thursday for a night out at the Columbia restaurant in Ybor City. We had reservations for dinner and the Flamenco dancing show.
For dinner I ordered the 1905 salad, which came with fresh Cuban bread, the Marilyn & Joe Salteado which is a yummy mix of chicken, pork, beef and veggies with a side of yellow rice:
After dinner we strolled the streets of Ybor for a while then headed back to our place to relax.
Friday I was up early to set up a wedding. It was a Tuscan inspired wedding:

Friday evening we picked up the parents and went to Soho Sushi. I was really happy with this restaurant. I had been falling out of love with sushi and this sushi renewed my love. But the real star was the vegetable fried rice. It was the best fried rice I have ever had!!! We all split a variety of sushi rolls and 2 fried rices:
The fried rice came with a salad with ginger dressing and miso soup, and I surprised myself by loving the soup. It had a savory smoky flavor:
Saturday morning I was up bright and early for another wedding set up. I got a little camera happy capturing all the great details:

I made it through the wedding set up, but it was downhill from there. Cramps hit me hard and I had to miss a night out with the rents 😦 I was in bed with a heating pad after a hot bath and that was all she wrote. Good thing I rested up and was feeling much better for Sunday’s wedding set up.

After work, I needed a pick me up so thanks to a generous tip of a Starbuck’s gift card from a sweet bride’s mom, I had a skinny pumpkin latte:
Sunday evening we had another great meal out at Kona Grill. They have terrific deals in the bar area and outside patio. Half price apps, we split a bunch of them: Fish tacos, sliders, potstickers, and bbq chicken flatbread.
I tasted a couple of bites of bread pudding:

It must have been all that yummy food that powered me through those 8 miles this morning. The rest of the day was spent doing laundry, cleaning, and a little napping, lounging, magazine reading and cooking. I made a big batch of quinoa, chicken and salads for the week as well as an easy ravioli bake for dinner.
I sautéed some chopped mushrooms, added a can of cannellini beans and a jar of vodka sauce. Then I layered 2 layers of frozen whole wheat spinach and cheese ravioli with the sauce and Asiago cheese, then baked for 30 minutes.
Now I’m vegging on the couch with my honey and all is good. Tomorrow I’ll gear up for another 3 weddings this weekend 🙂
