Weekend Indulgences and Weekday Healty Eats

Happy St. Patty’s Day! We didn’t do anything particular to celebrate. We pretty much just celebrated life all weekend long, starting with Friday night date night at home.

Dinner was soft Italian bread with olive oil and Italian herbs and spices:

A crisp green, romaine salad with tomatoes cucumber, and homemade roasted red pepper dressing. It’s Rachel Ray’s recipe you can get it HERE, and I love it:

And another Food Network star’s recipe for the main course, Giada DeLaurentiis’ Shrimp Fra Diavolo:

I have used both of these recipes many times over the past 5 years and I keep coming back to them.

Saturday we ended up at Ceviche in Tampa right at 5:00 when they opened. We tend to eat like early birds on the weekends, just having one big mid-day meal instead of lunch or dinner. This was a treat! We sat outside and soaked up the beautiful weather. As our tapas came, we leisurely savored our meal:

Sunday was a beautiful day as well. Perfect running weather and we dined outside again. We walked to Kona Grill and enjoyed their happy hour on the patio. They have drink and food specials, so we got some half price sushi rolls:

Cheeseburger sliders, and chicken tacos which we ate half of, and had leftovers for Matt again. This is becoming our weekend habit 🙂

After all that weekend indulging, I was happy to plan, shop and prep lots of healthy eats today.

Proteins are poached chicken and hard boiled eggs:

The buns were for today’s Meatless Monday dinner. Skinnytaste.com’s spicy black bean burgers,with potatoes, green peppers and onions:
